Farmed on organic principles, hand picked, hand pruned, unirrigated. Mixed clay topsoil over a limestone base. Natural yeast fermentation with a portion of whole bunch. Matured in French oak, of which 10% was new, for 10 months. 120 dozen produced. Vinified with the help of Matt Holmes at Bannockburn Vineyards. Tasting Note
